The Sanctis family has been running this restaurant for four generations, right here in Piazza Navona. The name "Camillo" comes from the founder, who happens to be the grandfather of the current owner. His portrait even serves as the restaurant’s logo, a tribute to the legacy that continues to thrive today.



The kitchen at Camillo is led by Tommaso, a chef who honed his skills at some of Rome’s most renowned restaurants.
While he stays true to Roman culinary traditions, his approach is uniquely inventive, incorporating techniques and flavors from Asia and India.

His global travels have brought a rich diversity to Camillo’s menu.
For instance, during a visit to Japan, he studied local ingredients and techniques firsthand, even meeting with soy sauce artisans to deepen his understanding of fermentation and umami.
These experiences shape his dishes in unexpected ways, like handmade pasta subtly infused with delicate Japanese dashi or Rome’s classic roasted veal reimagined with miso, katsuobushi (bonito flakes), and other Japanese flavors.

Bar Manager Alessio has a unique background, he originally founded a business in the communications industry but always carried a deep passion for food and beverages.
In 2017, he made a bold career shift, fully immersing himself in the food & beverage industry. Over time, he became increasingly captivated by the art of mixology, refining his craft and developing a distinctive approach to cocktails.

Alessio’s cocktails are more than just drinks, they are carefully crafted experiences. Every element, from flavor balance and aroma to premium ingredients and refined presentation, is meticulously considered.
