In an exclusive masterclass, Michele Reina, renowned for his deep expertise in whiskey production, joined forces with Meregalli to present two exceptional product lines from the Beam family.
This tasting experience highlighted the complexities and craftsmanship behind two very different whiskey styles, showcasing the artistry of distillation, aging, and the importance of experience.


A Technical Dive into Limestone Rye Whiskey
The masterclass began with an exploration of Limestone Distillery, a small-scale operation (only 9 barrels per day) founded in 2010 by Stephen Beam.
As Michele took the floor, he started with a technical breakdown of rye whiskey, explaining its legal definition and the precise distillation process involved.
Rye whiskey, by law, must be distilled from at least 51% rye, a grain that presents unique challenges to distillers.
Michele detailed the difficulties involved in working with rye, from its tendency to produce more impurities during distillation to its volatile flavor compounds.



The discussion delved into the science of flavor extraction, highlighting key molecules such as ferulic acid and linalool, which contribute to the whiskey’s distinctive taste.
Michele explained how the extraction of flavors from rye is influenced by the distillation temperature. To preserve the delicate flavors associated with these molecules, distillers must operate at lower temperatures.
However, distilling at such temperatures increases the risk of impurities, which is where the use of new, charred barrels becomes essential. The charred wood helps filter out these impurities, ensuring a smooth and flavorful whiskey.

How to Read a Rye Whisky Label - Michele’s Tips
One of the most valuable aspects of the masterclass was Michele’s explanation on how to properly read a bourbon label.

Tasting:
1. Minor Case Straight Rye Bourbon
The first tasting introduced Minor Case Straight Rye Bourbon, spending at least three years in new charred oak barrels before being finished in a unique American Cream Sherry cask. This finish gives the whiskey a distinct yet harmonious flavor profile. The mash bill for this bourbon is 51% rye, 4% malted barley, and 45% corn, with the taste being a perfect blend of spicy notes, green fruit, and soft undertones. The ratio of rye is key to ensuring that the whiskey is not only called rye but also highlights the influence of the cask finish.

A Tribute to Stephen Beam and Tradition
Throughout the session, Michele made a point of highlighting his special relationship with Stephen Beam, both professionally and personally. Stephen’s family, as is easily understood by his surname, has been deeply rooted in bourbon history, and his commitment to preserving traditional distilling methods is evident in the quality of his whiskeys.
In 2015, after discovering a pot still used by his grandfather in a museum, Stephen decided to take control of the production of Yellowstone in partnership with Luxco. With the help of modern chemistry, he analyzed the yeast used in the old pot still and tried to recreate the original, historical flavor of bourbon.
His dedication to reviving these old techniques has helped shape the unique flavor profile of Yellowstone whiskeys. Additionally, Stephen ensures that his corn is non-GMO, using a variety that produces less starch than modern breeds.

1. Yellowstone Select Kentucky Straight Bourbon Whiskey
Upon tasting, the strong corn flavor immediately fills the mouth, this bourbon showcases the traditional bourbon-making practices of the region. Its rich, full-bodied profile gives way to a deeply satisfying taste, showcasing the distinct characteristics of corn.


2. Yellowstone American Single Malt Whiskey
Made from 100% malted barley. Produced at the MGP Distillery, this whiskey has a bready flavor profile that’s both smooth and complex, offering a glimpse into the diversity of flavors that American single malts can offer.


3. Yellowstone Handpicked Collection - Lion's Choice
A single-barrel whiskey with an exceptional corn flavor. This particular barrel was personally selected by Stephen Beam for Meregalli, resulting in a harmonious and refined whiskey that stands out in both flavor and rarity. With only 250 bottles available, it’s a true collector’s gem.
